Zucchini Applesauce Bread {egg free}


1 cup granulated sugar
1/2 cup brown sugar
1 1/2 cup applesauce
2 teaspoons vanilla extract
1/2 cup vegetable oil
3 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 to 2 teaspoons cinnamon
1 teaspoon nutmeg
2 to 2 1/2 cup shredded zucchini (2 medium zucchinis)


This recipe makes 2 standard loaf pans (8.5″x4.5″). Trust me you’re going to want 2 of them because it’ll get eaten so quickly.

First, shred your zucchini. You can click here to see if we have any in the Farm Store today!

Preheat your own to 350 degrees F. Combine the sugars, applesauce, vanilla and vegetable oil and cream together. Add the dry ingredients and mix until everything is combined. Fold in the zucchini.

Add to 2 greased loaf pans. Bake for 50 to 60 minutes until a toothpick comes out clean. Top your slice with a little butter and enjoy!!!
