Turnip Greens with Turnips & Bacon

Ingredients

1/2 to 1 lb. Turnip Greens, thoroughly washed several times
4-6 cups turnips, cut into 1/2 cubes
6 strips of bacon (or more if you are a bacon lover), cut into 1/4 inch slices
3/4 cups chopped onion
2 cloves garlic, minced
1/4 tsp black pepper
1/8 tsp red pepper flakes, optional
1/8 cup Cholula Sauce, or your favorite hot sauce
1 cup beef stock
1 tsp salt, more if needed or to your taste

This recipe takes about 1.5 to 2 hours from the time you begin prepping until it’s done cooking but it is totally worth it!!

In Dutch Oven on medium heat, cook bacon until crispy.  Add onions and cook until onions are tender.  Add garlic, pepper, and hot sauce and stir.  Add greens, turnips and beef stock and stir.

Reduce heat to low and cook for 45 minutes to 1 hour, stirring occasionally.  (I used a pressure cooker for this part – processed for 15-20 minutes).  If there is a lot of liquid left, cook on medium until most of the liquid is gone, stirring nearly constantly.  Taste and add additional seasonings, if needed.  Serve and enjoy!

For a quicker method of cooking… instead of cooking on low for an hour you can use a pressure cooker and let it process for 15-20 minutes if you have one!
