Juice is great for soups such as chili or tomato soup, making fresh salsa, cooking in meats such as meatloaf, or even drinking. Canning or freezing will give you fresh juice to use for these recipes all year round!
Directions:
Wash tomatoes. Cut into pieces around an inch to and inch and a half. Put them in large saucepan. Add 1 medium onion and 2 teaspoons salt for every 8 to 10 cups of cut tomatoes. Cook on medium high for 30 minutes to an hour until tomatoes and onions are very soft, stirring frequently.
Process through food mill or vegetable strainer (we use vegetable strainer attachment for our kitchen aid mixer). After straining, continue cooking until it reaches your desired consistency. Use the juice now or you can either freeze the juice or can it to preserve it.
