Sweet Potatoes

This side can quickly be thrown together for supper! It’s a great way to introduce sweet potatoes to someone who has never given them as chance because it’s just like eating french fries with a little bit of a twist! I didn’t put exact measurements for this recipe since you can decide what is best for your family. 2 small sweet potatoes made more than enough for my husband and I. It is also up to you whether to peel the skin off or not. I like them best with the skin and my husband likes it better without!
Instructions:
Wash your sweet potatoes and cut them in half lengthwise. Preheat your oven to 450 degrees. Cut the ends off to avoid creating super tiny pieces! Cut long ways first like shown in the photo below.
Then cut the other way to form a grid. Continue this for each half of your potatoes until you have lots of little fries ready. Coat them with the olive oil and sprinkle with a generous amount of salt and pepper. Mix them up well so both the bottom and top of the pieces are covered.
Bake for approximately 15 minutes, flipping the pieces halfway through. Cook until your desired level of crispiness… I like them crispy so I left them in a little over 15 minutes!
