Lemon Zucchini Cobbler

Ingredients

1/2 cup lemon juice
3 cups of zucchini or yellow squash that has been peeled, any large seeds removed, and cut into 1/4 inch squares
1/2 cup sugar
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
2 cups flour
1 cup sugar
1 1/2 sticks of cold butter, cubed
1/2 teaspoon cinnamon

Yes, we know…it sounds strange zucchini cobbler…but this is a great recipe for those who want to enjoy their zucchini without even knowing they are eating it.  Most people would guess that it’s actually peach or apple cobbler.  Yummy, easy dessert!

 

Instructions:

  1. Cut the zucchini into cubes and cook in a skillet with the lemon juice for 15 minutes or until zucchini is tender. Add 1/2 cup sugar, nutmeg, cinnamon. Cook for another minute. Set aside.
  2. For crust combine the rest of the ingredients in a bowl. Mix together with fingers or pastry brush until well mixed crumble. Stir 1/4 cup of this mix into zucchini. Press half of remaining mix into 8 by 8inch pan. Spread zucchini over top. Sprinkle crumb topping on top. Bake at 375 degrees for about 25 to 30 minutes or until browned on top. Let cool and enjoy!
