1 (14 oz) package smoked sausage cut into 1/4 inch slices
2 cloves garlic, crushed
1 large Tuttle's grown red bell pepper, sliced thin
Small head of broccoli, cut into small florets
1/2 cup chicken broth (you can use water as a substitute if you are out of broth)
1/2 cup chopped fresh Tuttle's tomatoes
1 1/2 cups instant rice
1/2 cup shredded mozzarella cheese
1/4 cup olive oil
I knew the moment I saw the ingredient list for this recipe on allrecipes.com that I would be trying this meal! It was simple to make, yummy to eat, and made for some great leftovers. I made this recipe with 2 cups of rice but I have cut it down for you guys because I think the ratio will be better!
You could also put onion in this mix but I am not a huge fan of onions so I omitted them.
Heat your olive oil and crushed garlic, stir in smoked sausage slices and cook until smoked sausage is browned. Add pepper, broccoli, chicken broth, tomato pieces, and onion if you decided to add it. Simmer for about 10 minutes until the vegetables are tender and the liquid is absorbed. In the meantime, cook your rice according to package instructions. Stir rice into the skillet, sprinkle with cheese, and serve. I almost forgot to add the cheese at the end but I am warning you- don’t forget because it was a great finishing touch for this recipe!
