I realize this recipe is pretty basic but wanted to share in case you are looking for a quick and easy new way to make some veggies for your family. If you have picky eaters it might be a good way to show them that broccoli and cauliflower can be yummy!
Add carrots and a small amount of water to a microwave safe bowl and microwave covered for 2 minutes. Wash your broccoli and cauliflower and cut them into bite sized pieces. Add broccoli and cauliflower to your bowl and cook for 2 more minutes in microwave. Continue cooking in one minute segments until the desired tenderness. Drain the water and add approximately 4 oz of Velveeta to the top. Put the lid back on and allow to melt then stir up. Enjoy!
