1 cup cucumber, diced
1 pound tomatoes, peeled and diced
1/2 cup sweet onions, thinly sliced
Dressing:
1/4 cup oil
2 T apple cider vinegar
2 T sugar
1/2 teaspoon salt and 1/4 teaspoon pepper
1 Tablespoon chopped basil
Directions:
Combine cucumber, tomatoes, and onion in a medium bowl.
Prepare dressing by whisking together until sugar dissolve and it begins to thicken.
Add dressing to your medium bowl, starting with half and add more to your taste. Salad will keep refrigerated up to three days.
