Cucumber Cookies

Ingredients

Cookie Ingredients:
1/2 cup butter - softened
1 cup sugar
1 egg
1 cup grated Tuttle's cucumber (peeled, seeds removed, drained)
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
 Glaze Ingredients:
1 cup powdered sugar
2 tablespoons milk

I am pretty much always looking for a way to make desserts. These cookies caught my eye while scrolling through recipe options online… “Could cucumbers really make a good dessert?!” I had to find out for myself. These cookies surprised me- they had a consistency that reminded me of bread however they were very moist!

Directions:
To get grated cucumbers: peel your cucumbers, remove the seeds and grate with cheese grater. After cucumbers are grated, drain them for 30 minutes to remove excess water
In a large bowl mix butter and sugar together. Then beat in egg. Add in your grated cucumber and mix thoroughly. Add flour, baking soda, salt, cinnamon, cloves and nutmeg and continue mixing. Cover with plastic wrap and chill in the fridge overnight. Preheat your oven to 375 degrees F. Grease 2 cookie sheets. Roll the dough into tablespoon sized balls and place on cookie sheets. Bake for approximately 13 minutes.
Mix the powdered sugar and milk together in bowl for your glaze. Once mixed, top the cooled cookies with the glaze!
