I’ve really come to appreciate my crockpot and the easy yet healthy meals that can be made in it. It’s nice to come home after a busy day and have a real meal almost completely prepared already! I kept these fajitas pretty simple but you can mix up the vegetables to your liking, adding things such as different types of peppers or even a lime.
Directions:
Cut up your fresh peppers and your onions. Dice the tomatoes. Put tomatoes, peppers and onions in crock pot. Set chicken breasts on top of vegetables. If using a liquid fajita mix, simply pour on top. If using a dry mix, first dissolve in 1 cup of water then pour on top. Cook on low for 7 to 9 hours.
Once that is complete- shred the chicken, stir, and serve on tortillas. Enjoy them with your favorite toppings such as shredded cheese, lettuce and sour cream. This is enough food for a family of 4 and might even give you some leftovers depending on how hungry everyone is!
