1 cup breadcrumbs
1/2 cup grated Parmesan cheese
Salt and pepper
1 lb Asparagus
1/4 cup flour
2 eggs
This was a little messy to make but it didn’t take long to do. It was simple and delicious- just the way I like my recipes. I made them while I was waiting on my cabbage burger bake to cook!
Directions:
Trim your asparagus and beat your eggs. Preheat your oven to 425 degrees. Lightly oil a baking sheet. In a large bowl, combine your breadcrumbs and Parmesan. Season it with salt and pepper. You can decide on the amount based on what you like, I kept it pretty light on both of them. Set this mixture aside.
Grab a couple of your asparagus and dredge it in the flour, dip them into your eggs, and then dredge it in your breadcrumb mixture. Feel free to pat or hand-cover any area of the asparagus that doesn’t get covered.
Place your asparagus on your baking sheet as you finish them. Keep them in a single layer. When you are done, place them into the oven and bake for about 12 minutes. Flip them over about half way through this time. They are done once they are golden brown!
