3 tablespoons Coconut Oil
2 medium onions, chopped
8-10 cups yellow squash cut into 1/2 inch cubes
1 1/2 tsp. Salt
1 tsp. Pepper
1/4 cup butter
1/2 cup heavy whipping cream
4 ounces cream cheese
** Optional - one can of corn, drained (for creamed corn)
This recipe is a great alternative to mashed potatoes. It is KETO friendly and takes just about 30 minutes to prepare!
First, sauté your onions on medium heat in coconut oil in a large skillet until tender. Add yellow squash, salt and pepper and stir. Place lid on skillet and cook over low/medium heat for 30 minutes or until squash is very tender, stirring occasionally.
Remove lid, add butter and mash with a potato masher. (Or, you can put it in a food processor for 20 seconds). Add the heavy cream and cream cheese (and corn if you desire) and mix thoroughly. Cook on low for an additional 5 minutes until creamy and thick.
Add additional salt/pepper to taste. Serve and enjoy!
