Cut the kernels of corn off the cob and cut your fresh pepper into small pieces. Heat skillet on medium-high with 2 tbsp of olive oil. Add your fresh corn, pepper, onion and garlic, cook for about 5 minutes or until it begins to get tender. Add fresh diced tomatoes and cook for about 5 more minutes. Remove from heat and place in bowl with cilantro. Allow to marinate for at least 10 minutes and serve warm or chill and serve once cool.
