1 cup fresh Tuttle's sweet corn, cut off the cob
1/2 cup flour
2 eggs, separated
1 1/2 teaspoon baking powder
1/2 teaspoon salt
I honestly thought my husband was kidding when he told me he would make corn fritters to go with our supper the other evening. I was trying to envision these fritters as a combination between a pancake and cornbread and I wasn’t super excited about them. I still can’t explain the sweet taste exactly but they were surprisingly delicious!! We will be having these again!
Directions:
Beat egg yolks with your fresh corn. Add dry ingredients, making sure you mix well. Fold in beaten egg whites. Fry in margarine or butter.
