I’m willing to try just about any recipe that involves cheese. These cheese filled zucchini treats didn’t disappoint!
Directions:
Wash your zucchini and cut off the ends. Use a mandolin slicer to cut the zucchini length-wise into long strips. You should be able to get enough strips for about 5 or 6 rollups from each zucchini depending on how thick you make them. They need to be relatively thin so they can be folded without breaking.
Once you have your zucchini cut, you use two for each rollup. Criss-cross the two pieces and put your cheese in the middle. I made some with mozzarella cheese and I also tried a couple with some Velveeta cheese. I wouldn’t hesitate to try other types of cheese if you have a favorite! Fold the zucchini over the cheese and use a toothpick to hold the rollup together as shown in the photos below.
Coat each rollup completely in flour. Dip each one into eggs and then roll in parmesan cheese and breadcrumbs to form the breading. Fry in oil at 325 degrees F. Make sure the oil is deep enough to cover the whole rollup. Fry until golden brown and then enjoy once they cool!
