1 1/2 cups cooked spaghetti squash
1 cup panko bread crumbs
1/2 cup shredded parmesan cheese
1/2 cup shredded colby jack cheese
1 large egg
1 teaspoon salt

Directions:
Preheat oven to 400 degrees F. Halve your spaghetti squash, scoop out the seeds and discard of them. Rub the insides of the squash with olive oil. Bake until it is tender, which will be about 45 minutes. Remove from the oven.
Shred your squash by running a fork over it. In a large bowl, add all ingredients. Mix with a spoon until everything is thoroughly combined. Turn down the heat of your oven to 380 degrees.
Scoop about a tablespoon of the mixture and shape into a tot. Place onto a greased baking sheet and repeat with remaining mixture. Space tots about 1/2 inch apart. Bake for about 20 to 25 minutes until bottoms are golden brown and crispy. Flip over and bake for another 5-7 minutes. Serve warm with ketchup or other dipping sauce of your choice!
