1 head of cauliflower (white or purple)
1/2 cup golden raisins
1 small can of pineapple tidbits
1/4 cup almond slices
Place raisins in cup and cover with very hot water to soak while cooking cauliflower. Wash and cut cauliflower into very small florets. Drain juice from pineapple tidbits. Mix with cauliflower. Place on a cookie sheet. Drizzle olive oil over the top and mix. Bake at 475 degrees on top rack for 10-15 minutes or until cauliflower is well roasted. Remove and mix in almonds and 1 T of pineapple juice.
