I was a little worried about making this pizza out of cauliflower but honestly it tasted just like the real deal! I had already started this recipe before I realized we were out of mozzarella cheese but I improvised and it was still delightful.
Directions:
Put your cauliflower florets in a food processor and run it until they are ground into fine pieces. Transfer the cauliflower into a bowl and cover. Microwave it for about 5 minutes until it is soft. Pour it out onto a dry kitchen towel and allow it to cool.
Preheat the oven to 425 degrees F. Once the cauliflower pieces have cooled, use the towel to get out as much moisture as possible. Although it might seem weird to do, it is important. In a large bowl, mix the cauliflower, Parmesan, Italian seasoning, salt, egg, and 1 cup of the cheese. Transfer to your greased baking sheet and press it to be the shape and thickness you want your crust to be. I made it fairly thin and that worked well. Bake the plain crust for 6-8 minutes to help dry it out.
Take the crust out and add the pizza toppings. I added pizza sauce, pepperoni, ground sausage, and cheese. Bake another 10 minutes. Pull out your pizza and enjoy!
From a head of cauliflower to pizza… I never thought I would like this as much as I did. Give it a try.. you’ll save some calories and get the same yummy meal as regular pizza.
