Baked Potato Casserole


4 lbs red potatoes
1/4 cup butter
1/4 cup milk
1/2 cup sour cream
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp garlic salt
2 cups shredded cheddar cheese
Bacon crumbles


When I decided to try this recipe, I was a little leery that it wasn’t worth the extra effort and that it would be easier to make regular mashed potatoes. Definitely worth the effort and I will definitely be making it again soon!


Boil potatoes in a large pot of water until tender. Drain well and return potatoes to the pot. Mash your potatoes and preheat your oven to 350 degrees F. Mix the sour cream, butter, milk, salt, pepper, garlic salt and garlic powder to the mashed potatoes. Stir in 1 cup of shredded cheese and 2/3 of the crumbled bacon. Place the mixture evenly in a baking dish and bake in oven for 25 minutes.

Remove from oven and evenly sprinkle the top of the casserole with a cup of cheese and the remaining crumbled bacon. Return casserole to oven and bake until cheese is melted. Click here to see if we have potatoes in the store today.
